Hi all! Happy weekend!

G and I are about to leave for a night away in Taos! We most definitely need some time without phones, computers, distractions and just some time to enjoy this beautiful weather. We are planning to hike, play disc golf and drink whiskey! Some of our favorite things…

Jubilee

Garrett and I watched the worst move ever on Netflix – The Edge. It involves Alec Baldwin, Anthony Hopkins, a bear and a woodsy adventure. If you are looking for a chuckle and to pass the time it definitely will get the job done – otherwise, don’t waste your time watching it.

After the movie, G and I decided to make Southwest Shepherd’s Pie for dinner with salad. Post dinner G read and I watched a few documentaries about the Queen’s Jubilee on BBC America.   

 

 

 

 

 

 

 

 

Here is the recipe for the Southwest Shepherd’s Pie.

Preheat your oven to 400 degrees. In a skillet over medium heat saute carrots, onions, garlic and olive oil. Cook for 5 minutes. Remove everything from the pan and set aside. Then add ground turkey and green chile. Cook until turkey is brown. Then add the vegetable mix back to the turkey mixture and let simmer. While everything is doing its thing – cook potatoes and then whip them. Then set aside. Add black beans and oregano to the mixture simmering on the stove. Cook for about 3-5 minutes. Then put the mixture into a circular dish and cover with mashed potatoes. Bake for 25 minutes!

Lazy Weekend

Things at work have finally calmed down (for now) and I realized that I had some major blogging to do. Garrett and I have been busy traveling, working, and celebrating. Last weekend we celebrated- two graduations and one wedding – all back east. It was nice to go home and visit but, it was nice to come back to “not-so-humid” New Mexico.

Garrett and I have been resting this weekend and Garrett has been fighting a nasty bug. Despite feeling under the weather, we’ve enjoyed our time together – dog walking, shopping, and EATING!

We spent the rest of Saturday watching movies and snacking. Garrett really needed some down time and it was so nice to have him home with me on a Saturday despite not feeling so well. 

This morning we woke up and had a nice breakfast together and then headed to my co-worker/friend’s house to walk her dog, Emmy. Emmy was a great sport and Garrett enjoyed walking her at the dog park and playing with toys! 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

After Emmy’s walk we went to our favorite coffee shop, The Lucky Bean, and then to World Market and REI so Garrett could get new hiking boots and I could get a new camelback tube. We then got lunch to go from Flying Star and enjoyed it at home.

After brushing off the Jubilee Display and commenting about “how silly” the Queen is Sir  Garrett America found the super American and Patriotic Freedom Chips. We didn’t buy them.
