G and I have decided to start brewing beer! Our kit just arrived and tonight we will be stopping by the store to get ingredients for our first batch! How fitting on St.Patty’s Day! Let the adventure begin!

Happy St. Patrick’s Day!!!! As most of you hopefully know, my name is Erin (which means Ireland), and I’m very Irish. I lived in Italy in 2008 and that fall I accomplished my dream of going to Ireland. I went to Dublin with friends and loved every minute of it. I would love to return to explore more of the cities and countryside…someday…

Anyway, let’s take a  little trip down memory lane and let’s head to Dublin!

Thanks for going back to Dublin with me this St. Patrick’s Day and I’d like to leave you this morning with one of my favorite Irish poems:

“May the road rise up to meet you, may the wind be ever at your back. May the sun shine warm upon your face and the rain fall softly on your fields. And until we meet again, May God hold you in the hollow of his hand.”



This morning we woke up to snow and decided to take our time moving around because, well, we were both exhausted. Garrett had a very busy and cold week working with Habitat and I wasn’t insanely stressed by work but exercised a ton! This week I attended Hot Yoga twice and ran about 17 miles and biked 10. This morning we took our time getting up and decided to celebrate the time change (ugh) by having breakfast sandwiches. They are a staple around here.

After our nice quiet breakfast we decided to do some grocery shopping. We frequent Smiths Grocery store because they offer the best combination of affordable healthy food and cheapy bulk food for Garrett. We have a Smith’s card and really enjoy the savings and coupons! 














   Aw, what a guy! Helped me shop, carry in the groceries and put them away! 







After we got our groceries put away we had a fabulous lunch of leftovers and then we went on a 10 mile bike ride on the Santa Fe Rail Trail and Arroyo de los Chamisos Trail. We had a great time and it was so nice to see the snow disappear and the sun shine! I was a little sore on the ride but, enjoyed spending time with G!

  This part of the trail was much steeper than it looks. I definitely struggled up this hill. 







Once we got back home it was almost dinner time. I decided to set up a potato bar for the two of us. We had turkey bacon, salsa, black beans, cheese, pea shoots, and potatoes! It was glorious and…most importantly….simple! 





   It was a hit! 









   I swear a tater is under there! 










  After dinner I didn’t have any WWP points left but, I really needed a sweet treat after this past week! I decided to have some Trader Joe’s cool whip, flax, peanut butter, chocochips, and fresh strawberries. It hit the spot! 



This upcoming week should be nice and laid back. I’m looking forward to some intense runs and lots of Hot Yoga (my new favorite thing)!!!!

So, what’s really for dinner?

Hi Friends!

I’m so excited!!!!! I just found out that Blue Moon Hot Yoga in Santa Fe will be offering free classes this Thursday! I’ve wanted to try hot yoga for a while but could never justify the $15/class. Honestly, I just didn’t feel like spending the cash to be stuck in a sweaty and smelly room with people I didn’t know attempting to touch my toes and failing for 90 minutes. Today during my lunch break I was randomly checking their website and found out about the free classes. I convinced a co-worker of mine  to go and she said YES! Thursday should be a lot of fun and I’ll keep everyone posted on how the sweaty toe touching goes 😛

Today was not the best food day. Girl Scout Cookies have been delivered and they seem to be popping up everywhere both at the office and at home. Must…..resist……….cookies! Other than consuming way too many cookies I ate pretty well.

Breakfast consisted of a homemade breakfast burrito with a fried egg, nutritional yeast, salsa and yellow pepper. Here it is wrapped up and ready to hit the road! 









For lunch I had leftover penne from last night. Penne the next day isn’t the best even when heated.











When I got home from work I had to totally fight the urge to NOT demolish our Girl Scout Cookies and decided to make the next best thing – lentils with pea shoots added to the last bit of pasta from last night. Dinner tonight was wicked proof that I desperately need to get groceries. I need more fresh and green things in my life! 




 ERIN, don’t do it!!! 









 Ah, much better. I also added some Green Chile bread to the mix from Golden Crown in Albuquerque! It ended up being a pretty tasty meal. 






Tonight, I’ve come to the conclusion that I should spend less time on my computer and more time reading this! 











Okay, I’m definitely ready for some shut-eye. See y’all tomorrow 🙂

A little spring in my step…

Happy Monday!

This morning I was up early to run the 5 miles I was supposed to run this past weekend and was really hesitating pushing myself but, I’m so glad I did! I ran 5 miles in 50 minutes and burned about 640 calories. I will say that I hope by re-committing to my blog I will be more serious about my exercising and eating habits. I don’t want to be behind on my training runs or over my Weight Watchers points anymore! I really want this time to be different! You know what?

This time IS going to be different! 

When I got back to the apartment I found Garrett packing up to hit the slopes. He works Tuesday thru Saturday and usually snowboards at Ski Santa Fe on Mondays. After he left I pulled my overnight oats out of the fridge and chowed down. They are such a great way to start the day! Cool oats after a sticky and sweaty run seem to hit the spot.



Our apartment’s gym! It is a nice little gym and is open from 7am-10pm. I ran on the treadmill and enjoyed some tunes and the Today Show. 







After completing 5 miles in about 50 minutes.

I know , I know…not that glamorous but, it felt so good to finish! P.S. Nice hair! 







Mmm…overnight oats. Oats, chia, flax, white chocolate wonder, chococranberry cookie, and milk! Tasted great after my morning exercise.









Garrett heading off to snowboard but, of course, he wanted to take some munchies with him! He decided the whole bag of chocolate/vanilla cookies would make a good snack. Better you than me buddy!








Okay, off to work!

This afternoon I have my AfterWorkExercisePRogram (AWEP) and then home for a nice dinner with G! Enjoy your day!

Stevia Cranberry Chocolate Chip Cookies

A co-worker of mine really tries to limit his sugar intake and I decided to take a stab at sugar-free baking (with stevia) as a thank you for an errand he ran for me last week. He is such a sweet guy even if he doesn’t eat sugar (hehe) and I decided to treat him to a tasty baked good. Below is the recipe! 

Pre-heat your oven to 350 degrees and in a mixing bowl beat together 2 large eggs, 2 tsp Stevia, and 1/2 a tsp of vanilla. 


Next add 1 1/2 sticks soft unsalted butter and mix. After you have a nice smooth mixture add 2 cups floor, 3/4 tsp baking powder, 1/2 tsp salt, 1/2cup cranberries and 1/2 cup chocolate chips! 

Yummo! Next grease 2 baking sheets and place about 12 cookies on each sheet and bake for 10-12 minutes! 

Once the cookies have finished baking let them cool for about 10-15 minutes. After that, consume as many as you like! They don’t have sugar in them…they must be good for you! 

Overall, these cookies were very tasty. They were a little dry and tasted a lot like shortbread. Garrett, on the other hand, wasn’t a fan! The man who eats everything only gave these cookies a 1/2 thumbs up. I hope my co-worker, Walt, enjoys them. 🙂
